vegan almond milk eggnog

i have been craving eggnog this year! weird! it has been many years since i last had a drink of eggnog. considering that i am allergic to both milk and eggs, i guess that’s not so surprising…

earlier in the christmas season i tried making an eggnoggy drink using vanilla protein powder (that we use in smoothies) it was so-so. but this recipe, i am really happy with! it is nice and thick like eggnog should be, and matt says it tastes as good as real eggnog.

when scouring the internets for eggnog recipes, i found a few that call for pudding mix - and what is pudding mix but sugar, cornstarch and flavour? this led me to consider my newfound love of making pudding, and how it could be adapted. come to think of it, i bet this would make a tasty pudding if you used more cornstarch!

ingredients:

4 c almond milk (one small tetra pack)
2 heaping T corn starch
1 T vanilla
3/4 t nutmeg
1/2 t cinnamon
1/2 c brown sugar

to make:

whisk everything together in a big pot. make sure to get out all lumps.


bring to a boil on med heat, stirring constantly.


once it boils, remove from heat and allow to cool (be careful, it may boil over if you don’t pull it off the heat fast enough!!). whisk every once in a while as it cools (if you don’t do this a skin will form - not a huge deal, really. it just looks gross.)

refrigerate in a bottle or jar to cool.


add rum if that’s how you roll, or use it to make a latte!
