way back in the day, when matt and i were the poorest of the poor, we
ate dahl ALL THE TIME. it’s ever so tasty, and it’s one of those
recipes you can just throw anything into and have it taste spectacular.
the key with this one is the spices. no matter what kind of beans and
veggies you use, the spices are what make it taste so good. it can be
eaten hot, over rice or with bread, cold with tortilla chips as a dip…
it’s so versatile!
i have made lots of different versions of this recipe, for example
black beans and tomatoes! this is the classic recipe that i use though.
ingredients:
1 med onion
hot sauce to taste
2 or more cloves of garlic
oil
1 can lentils (or 1 c dry red lentils)
1 can mixed beans (or whatever you have)
water
a few handfuls of spinach
spices:
1 t cumin
1 t coriander
1/8 t cardamom
1/4 t cayenne
1 t salt
1/4 t pepper
hot sauce to taste
2 or more cloves of garlic
oil
1 can lentils (or 1 c dry red lentils)
1 can mixed beans (or whatever you have)
water
a few handfuls of spinach
spices:
1 t cumin
1 t coriander
1/8 t cardamom
1/4 t cayenne

1/4 t pepper
to make:
fry onion in a few T oil for about 5 minutes on medium heat.
add garlic and hot sauce and stir it all up.
add lentils, beans and enough water to cover them. boil on medium-low
with the lid off until everything is cooked and a stew-like
consistency. if you are using dry lentils you may need to add more water
as it cooks, but you don’t want to add too much!!
add spices and stir, then spinach. let it sit for a few minutes until the spinach gets warm and wilty.
EAT!
