slow cooker black bean soup

i love beans, and of all the beans in the world, black beans are my favourite. this soup is perfect for a cold winter day, or to take along to a potluck.

since i work from home, my slow cooker gets quite a bit of use. even if you don’t have the luxury of a home office, slow cooker soups and stews are within reach - i would recommend putting everything together the night before, or before you leave in the morning, and leaving it set on “low” all day.

ingredients:

2 c black turtle beans (dry)
1 t cumin
1 t turmeric
3 T garlic salt
3-4 c chopped veggies (i used yams, carrots, onion, celery)
1 T sambal olek or other hot sauce
2 T garlic
1 t salt

soak beans overnight. i do this in the slow cooker - just put the beans in and cover with at least a couple of inches of water.

the next day, turn the cooker on high in the morning. add cumin, turmeric, garlic salt and veggies (chopped small - 1/2” by 1/2” or so).

cook on high for 6 or more hours (or on low for 8-10).

add sambal olek, garlic and salt, and cook for another 45 minutes - 1 hour.
serve with a scoop of cottage cheese or sour cream, if you like!
