do i make too many muffins? i’d like to think there is no such thing!
the other day i made this recipe
as muffins instead of bread, and added a nice crunchy topping as well. i
am very happy with how they turned out. there really is nothing like a
hot, fresh muffin on a cold day!
ingredients:
1 1/2 c flour (can be gluten free - add 2 t xanthan gum)
3/4 c sugar
1/2 t salt
1 T baking powder
1 t cinnamon
1 t nutmeg
1/3 c oil (i use olive)
1 egg
1/3 c milk (i use almond)
1 large apple
topping:
1/2 c pecan pieces
2 T rolled oats*
1 T sugar

1 T sugar
to make:
combine flour, sugar, salt, baking powder, cinnamon and nutmeg. in a
separate bowl, combine oil, egg and milk. mix wet and dry together, and
add apple, peeled and finely chopped.
spoon into muffin tin. mix pecan pieces, oats and sugar, and sprinkle on top.
bake at 400 for 30 minutes!
*oats are technically gluten free, but are often processed with the
same equipment as gluten-containing grains. if you are going for
gluten-free, ensure the oats you use are not contaminated!
