pesto is good for so many things. i use it instead of pizza sauce, to
top a soup, add to pasta, marinate veggies…. the options are endless.
there are also endless combinations with which you can make a creative pesto. classic basil, sundried tomato, or this lovely roasted red pepper and oregano.

i made this recipe to top a soup, so it makes a small amount in the end, under a cup.
ingredients:
1/2 c roasted red peppers
1/2 c fresh oregano
1/2 c olive oil
2 t garlic (or less if you’re a wuss)

to make:
throw everything in a small blender or food processor (making sure you’re using only the leaves of the oregano).

pulse until finely chopped and well mixed.
