mmmm turnip!
turnip is one of my favourite vegetables, but it took me SO LONG to
figure out how to cook it. i have tried boiling turnips many times, and
they just turn out white and watery and tasteless.
blech!
but i have persevered, because i love turnip so much. after much
experimentation, this has become my favourite way to cook turnip. it
takes a long time, and isn’t the simplest, but my mashed turnips turn
out so soft and flavourful. it is worth the extra time.

i usually prepare them the day before (especially for a big
thanksgiving or christmas dinner when i have tons of other cooking to
do) and just reheat them in the microwave.
ingredients:
2 large turnips
2 T olive oil
1 c water
1/4 c brown sugar
1/8 c butter or margarine

to make:
take your turnips.

peel them (i use a knife - take off about 1/4” of skin, as well as the tough top and bottom)

chop them up into chunks about 1 1/2” square. coat in 2 T olive oil,
and put in a baking dish. bake at 385 for half an hour, stir, then half
an hour more.


next, mix water and brown sugar, and pour over the turnip. mix to
coat, cover with tinfoil and bake for 1-2 hours more. stirring every 1/2
hour. they are done when they break a part when stabbed with a fork.
depending on the turnips, it may take more or less time.


once they are soft, add butter or margarine and mash (preferably with a hand blender).

they can be made a day or two ahead and reheated!
