we LOVE curry. we also LOVE peanut butter.
at first when i heard the idea for a peanut curry sauce i thought
“ick”, but oh man was i wrong!! this has become one of our favourite
curries. as a vegetarian, sometimes it’s hard to get enough protein in
my diet, and this makes for a nice balanced meal!
ingredients:
3 c chopped veggies
2 c meat/tofu/whatever you like
2 handfuls of spinach
2 handfuls of spinach
sauce:
garlic (i use about 2 T but i REALLY like garlic)
2 T red curry paste
3/4 c peanut butter (i use natural)
1 can unsweetened coconut milk
1 T soy sauce
1 T lime juice
1 t sambal olek or other hot sauce (if you like)

to make:
mix all the sauce ingredients together.
stir fry your veggies for about 10 minutes, or until they are most of
the way done. **please note, that is NOT REAL CHICKEN (pc “world’s best
meatless chicken breasts”) if you are cooking with real meat i assume
you know what to do with it!!**
add the sauce, and cover with a lid. put the burner on low heat, and
let the sauce cook with the veggies about 5 minutes, stirring
occasionally. stir in the spinach right at the end.
serve over rice, or with naan bread!
