this has been my go-to banana muffin recipe since i was a kid. i am
not even sure anymore where i got the recipe, but it’s just right - i
have never needed to change it.
i decided to try out my new mini-muffin tin for this recipe (and topped with a pecan, of course!)

ingredients:
1/2 c butter
1/2 c sugar
1 egg
2 med bananas
2 t vanilla
1 t baking soda
1/4 t salt
1 t nutmeg
1 1/2 c flour (gluten free is fine, add 1 1/2 t xanthan gum)

to make:
melt butter, and add sugar, egg, vanilla, baking soda, salt, nutmeg
and bananas and mix well. i use a hand blender for this part, but you
could also use a fork to mash the bananas before adding them.
mix in the flour, and stir well.

spoon into muffin tins. (top with a pecan or a peanut if you like)

bake at 375 for 15 minutes for mini muffins, 20 minutes for normal sized.

eat mini muffins in fistfuls, pretending you are a giant!
