easy peasy vanilla pudding for two

i adapted my easy peasy chocolate pudding for two to make a vanilla version. it uses liquid vanilla, so would be less easy to take camping, but still pretty straightforward, and most of the prep can be done at home ahead of time. actually, the interslice tells me that you can buy powdered vanilla, so if you have that kicking around it would be great for the camping version of this recipe.



like my chocolate pudding, this is not overly sweet. feel free to add more sugar if you have a sweet tooth!

ingredients:

3 heaping T sugar (or more if you want it sweeter)
1 c milk (or 3 T powdered milk, and 1 c water)
1/4 t salt
1 heaping T cornstarch
1 T vanilla extract

to make:

combine all dry ingredients in a pot. if you are taking it camping, this can be done at home, and just put it in a baggie or tupperware.
add milk/water and vanilla. whisk to get rid of any lumps.
heat over medium heat, stirring pretty much constantly until it boils. once it boils you’ll see it thicken up right away.
once it thickens, pour it into 2 cuppies. you can put it in the fridge/cooler to cool, or on a cold evening, eat it warm! (although it does thicken further as it cools)
