banana bread

banana bread needs no introduction!

one thing i will mention though, is that banana bread (and muffins too!) are one of the easiest things to make gluten free. as soon as you throw a banana in there, everything just turns out right!

if you wanted to make this recipe gluten free, just substitute regular flour for the same amount of gluten free, plus about 1 1/2 t xanthan gum.

ingredients:

3-4 bananas
1/3 c butter
1 c sugar
1 egg
1 t vanilla
1 t baking soda
pinch salt
1 1/2 c flour
1 t each cinnamon and nutmeg (optional)

to make:

mash those bananas. i use a hand blender, but a potato masher or a fork would work as well.
mix in butter (melted), sugar, egg, vanilla, baking soda and salt.
then add flour, and mix well!
pour into a greased bread pan, and sprinkle nutmeg and cinnamon on top. you can skip this step, or include the spices in the mix if you prefer.
bake at 350 degrees for 1 hour.
cool on a wire rack.
