chocolate cookie cups with peanut butter icing

these were an experiment. they turned out really well, if i do say so myself. another baked treat for my christmas guests…

this recipe makes about 30 cookies!

ingredients:

1/2 c butter
1/2 c sugar
1 egg
1 t vanilla
1/4 c cocoa powder
1/4 t baking soda
1/8 t salt
1 1/2 c flour

to make:

melt butter. mix butter, sugar, egg and vanilla.

add cocoa powder, baking soda and salt.
add flour. you want the dough to be stiff, stiffer than normal cookie dough.
next, roll dough into balls, about 1 T to 1 1/2 T of dough. i used my mini muffin tin and muffin wrappers (i didn’t know how easily they’d slide out - pretty easily, it turns out).
next, make dents in the balls. i experimented with using my thumb, and the end of a rolling pin. they both worked.
bake at 350 8-10 mins. the middle dents puffed up a bit, and while they were still hot i poked them down with the rolling pin again (i guess you wouldn’t want to do that with your thumb. ouch!)
finally, fill the little holes with peanut butter icing!

i made 24 cookies, and had some dough left over, so i rolled it out and cut it with my cool new fall-themed cookie cutters.
i baked these at 350 for 6 minutes (they are quite small)
