it was my dear celiac suz’ birthday a few weeks ago, so her and her
boy came over for a gluten-free vegetarian dinner. gawd we can be hard
to cook for!
BUT, one thing everyone can agree on is PIE.
i am not much for making homemade pastry, but my local planet organic
sells gluten-free pie shells, and aside from that it’s my trusty
blueberry pie recipe!!
for some reason i didn’t really take any pictures of the process on this one - but it’s quite straightforward!!
ingredients:
1 pie shell
1/4 c corn starch
3/4 c sugar
1/4 t salt
1/2 t cinnamon
4 c blueberries
1 pie shell
1/4 c corn starch
3/4 c sugar

4 c blueberries
to make:
thaw your pie shell.
combine corn starch, sugar, salt and cinnamon in a big bowl, then add
blueberries (*i used frozen - measure them frozen, then thaw them, and
include the liquid*). mix everything up really well so the blueberries
are evenly coated.
pour into your pie shell.
bake at 425 for 50 minutes.
note: make sure you bake it on a cookie sheet with edges or similar.
blueberry pie always seems to boil over and get blueberry goo
everywhere. you don’t want that stuff baked to the bottom of your oven -
trust me!
