lunch-sized baked brie and baguette

so, i have this problem: when i make a baked brie, it tends to get eaten pretty fast... even if it's just ME eating it. that stuff is addictive!!

it's the kind of thing that i normally make for a nice dinner with friends, but sometimes i get the hankering for it, mid-day, mid-week! what's a girl to do??


i usually have brie in the fridge, for a snack on crackers, or to use in recipes... so i just cut out 1/6 of the wheel, and popped it in a little ramekin! i topped it with roasted red peppers (just about 1/2 a pepper) and some fresh oregano and garlic!

pop that sucka in the oven for about 10 minutes at 375, and BAM. AWESOME LUNCH!
also, in case you care, and somewhat to make myself feel better about eating cheese and bread as a meal, i calculated: for the 1/6 brie, toppings, and 1/8 of a large baguette was only 250 calories!!
