this is another of our favourite recipes. it’s a lightly spicy
stir-fry with tons of flavour. i am sure it could be made with real
chicken, i have always used either tofu, or president’s choice “world’s
best meatless chicken breasts”. *note, fake chicken is not gluten free*
ingredients:
1 lb (1 package) of extra firm tofu, or 2 pc meatless chicken breasts, cut into bite sized pieces
2 c veggies (i use broccoli, red pepper and onion)
1 egg
3 T corn starch
sauce:
1 T ginger
garlic (as much as you can handle)
1 c water
3 T soy sauce
4 T brown sugar
sambal olek or other hot sauce (as much as you like - i use 2 t)
1 T vinegar
1 T corn starch
2 c veggies (i use broccoli, red pepper and onion)

to make:
mix the egg and 3 T corn starch together. throw the chicken/tofu in and toss to coat.
stir fry your chicken/tofu about 10 minutes until it’s cooked and crispy. remove from the pan and set aside.
stir fry your veggies about 10 minutes/until they are cooked how you like them.
in the meantime, mix the sauce ingredients together and whisk to make sure the corn starch is mixed in well.
once the veggies are done, throw the chicken/tofu back in the pan, and add the sauce.
stir until the sauce thickens up. this should only take a minute or two.
serve over rice!
