a while back, i made the mistake of buying a big bag of apples. i am
not much of an apple-eater. i have a smoothie every day with berries and
bananas, but i don't really eat fruit on it's own.
needless to say, the apples sat around, and started to look a little
funny. they started to get a little wrinkly and soft. they were clearly
past the point of just eating... but what to do with them?
so i made an apple crisp!

it fits well with my feelings about dessert - fruit is good, not too
sweet, etc. i called my dad and got his old recipe... although i have
changed it somewhat, that's what it's based on.

4 c chopped apples
1/2 t cinnamon
1/2 t nutmeg
1/8 c sugar
1/4 c butter (or if you are going for a healthier option, apple sauce)
1/4 c brown sugar
1 t vanilla
1 c rolled oats
1/3 c pecans
to make:
peel and cut apples (i used 6 small apples) no smaller than about 12 slices per apple.

sprinkle with cinnamon, nutmeg and brown sugar, and toss to coat.

spread in a 1 1/2 qt baking dish.

mix butter/apple sauce, sugar and vanilla. then add oats and pecans and mix well.


spread on top of the apple mixture.

bake at 350 45 minutes
