neither of my parents were really into cooking when i was a kid, but we always had fabulous breakfasts. pancakes, fried eggs, bacon, maple syrup, peanut butter... does anyone else put peanut butter on their pancakes?
this is a pretty classic pancake recipe, with the addition of the strawberries and vanilla. i find the vanilla flavour goes really well with things like berries or bananas.
this recipe makes about a dozen 4" pancakes.
ingredients:
1 c white flour
1 t baking powder
dash salt
1 egg
1 t vanilla
about 3/4 c water
3/4 c strawberries
oil for cooking (optional)
to make:
mix flour, baking powder and salt. add egg, vanilla, and 1/4 c water to start. mix well, adding more water as needed. it should be about the consistency of cake batter.
chop strawberries and add. i used frozen, so i microwaved them for about 30 seconds to make them soft enough to chop.
heat a large, non stick pan to med. pour the batter about 1/4 c at a time.
flip the pancakes when the bubbles start to come through.
serve with your favourite toppings!
