homemade granola

i like cereal a lot, but (like many things) i often find it too sweet. i don't want it to be BLAND, just not overly sugary. it seems like the options available are all either far too sweet, or far too boring.

solution? make your own!

i did use one type of pre-made cereal in this, it's called mesa sunrise, made by nature's path. it's one of those very-healthy-but-overly-bland options. it's gluten free, and made from a few different grains, and is in "flake" format.

this recipe makes about 4 1/2 - 5 c.

 ingredients:

1/4 c natural peanut butter, or other nut butter
1/8 blue agave syrup, or other sweetener
2 c flaky cereal
1 c oats
1/4 c sunflower seeds, or other seeds
1/4 c chopped pecans, or other nuts
1 T gound flax seeds
1/8 t each nutmeg, cinnamon, salt
1/4 c dried blueberries
1/3 c freeze dried strawberries

to make:

mix peanut butter and agave syrup (or another sweetener - maple syrup, honey, etc) in a large bowl.

add flaky cereal, oats, seeds, nuts and ground flax seeds.

and mix everything up well!

then, spread the granola on a cookie sheet, and sprinkle with cinnamon, nutmeg and salt.

bake at 275 for 30-45 minutes, stirring every 10, until the granola is slightly browned and crisp.

allow to cool on the cookie sheet, and add dried berries.

store in a jar! enjoy with fruit, yogurt, etc!
