guacamole


i think as a vegetarian and a healthy eater, i’m obligated to love mexican food. i have no problem with this… i could eat beans and rice and salsa and corn chips every day!

but what would mexican food be without guacamole? it’s a key part of a tasty mexican meal, and a huge personal favourite of mine. i could eat avocados every day - and i probably should, i struggle to get enough fat in my diet, and avocados are full of healthy, awesome fats.



this is my favourite guacamole recipe, and makes about 3 cups!

ingredients:

 2 large avocados
2 T lime juice
2 t sambal olek (or other hot sauce)
1 T garlic
salt and pepper to taste1/3 c chopped green onion
1/2 c chopped tomato (no seeds)
1/3 c salsa

to make:

chop green onions. make 'em fairly small!
chop tomatoes. i remove the seeds first by chopping off the bottom and poking them out - this ensures that your guac doesn't get soupy!
next, set your onion and tomato aside, and move on to avocados! slice 'em in half, and scoop out the flesh, and put it in a large bowl.
add the sambal olek, garlic, lime juice, salt and pepper.
mix. i use a hand blender, and highly recommend one if you have one - it's quick and easy and ensures you don't stumble across a huge garlic pocket later on! regardless, even if you're mashing with a fork, make sure it's mixed well. 
finally, add your onions, tomatoes and salsa, and stir to mix, and eat! (seen here, lunch: with refried beans and tortilla chips!)
it will keep in the fridge for a few days.
