loaf generator burgers


so, i know i've been posting about this thing a lot, but i did warn you when i first found this fabulous vegan loaf generator that it was going to change my life!! i was not exaggerating. 

i've been making recipes with it so often at this point that i have stopped even consulting the generator, which (in my world) is awesome. i feel like i am truly loving something when i get to the point that i just throw things in a bowl and a beautiful recipe comes out, and that's what i'm doing these days with this recipe. 

this time i made burgers, and a few little falafel-style balls for a wrap. i used measurements on the smaller end of the scale (small can of beans, etc) and it was a perfect dinner for today-lunch for tomorrow amount for matt and i.

i have also been using this recipe to make "meat" balls (roll into balls, bake at 375 for about 30 minutes, turning half way through, serve on spaghetti with your favourite sauce), and at christmas i made mini-loaves in a muffin tin (the standard recipe made 12) for a potluck style dinner. the possibilities really are endless!


ingredients: 

1/4 c ground almond (grind your own, or you can get it from the bulk barn already ground)
2 T olive oil
1/2 c diced onion
1 c grated carrot
1 small can (348mL) kidney beans, rinsed well and mashed
1 c cooked quinoa
1/4 c chopped sundried tomatoes (the kind packed in oil)
1/4 c fresh copped basil (use 1 T dry if you don't have fresh)
1/4 c chopped fresh oregano (use 1 T dry if you don't have fresh)
1 T garlic powder
3 T flour (gluten free if desired)
2 T nutritional yeast
2 T soy sauce (i use china lily, which is gf)

to make: 

saute onion and carrot in oilve oil until soft (about 10 minutes).



mash your kidney beans well, so that there are almost no whole beans left. 


add the veggies, almonds, quinoa, sundried tomatoes, basil, oregano, garlic powder, flour, nutritional yeast and soy sauce. mix very well. add more flour if it's too wet, and a bit of water if it's too dry. it should be sticky but firm enough to hold it's shape. 


form the mixture into the shapes you want. i did 2 small (harmony-sized) burgers, 1 large (matt-sized) burger, and 7 falafel-style balls for a wrap for matt. 


bake at 375 for 25 minutes, then flip and bake for another 10-15 minutes. (the balls took about another 10, burgers another 15). i also added cheese (daiya for me, smoked applewood cheddar for matt) in the last 5 minutes. 



enjoy on a bun, in a wrap, or on it's own!
