chocolate cupcakes


wee chocolate cupcakes! 

these tasty vegan treats would make an awesome valentines day treat to bring to work, or give to your special someone instead of a box of chocolates!

they go really well with my peanut butter icing!

ingredients:

1 1/3 c flour
1/4 t baking soda
2 t baking powder
3/4 c cocoa powder
1/8 t salt
1 1/3 c sugar
3 T ener-g egg replacer (equivalent to 2 eggs)

3 T oil or margarine
1 t vanilla
1 1/4 c milk (i used almond unsweetened)

to make:

mix all wet ingredients in one bowl, and all dry ingredients in another.



and then mix them together, stirring until just combined with no lumps.


spoon into muffin tins. i used mini ones this time, but either size will do. 


bake at 350 for 22 minutes (mini) or 27-30 minutes (large), or until a toothpick inserted in the center comes out clean!

allow to cool completely before icing!
