banana ice cream


this is seriously one of the easiest, most amazing recipes you will ever make. you can literally make it with one ingredient, or you can add to it and make it as fancy as you like!

it's vegan! it's gluten free! it's tasty and healthy, but still a dessert. it's pretty much perfect. it would even make a really great summer breakfast.

you DO need a food processor for this, i don't think a blender would work. but, if you don't already have a food processor, you should get one. they are good for so many things!


 
ingredients:

bananas. as many or few as you like... this time i used 3 large, and it made 2 giant (1 c or so) servings. you want them to be "perfectly ripe" (whatever that means to you), as opposed to being old and brown like you'd want for muffins.

anything additional you like. my favourite things to add are
-1/8 c natural peanut butter
-3/4 c frozen berries
-1 heaping T cocoa powder
but really the possibilities are endless!!

milk. again, optional. see below!

to make:

take them there bananas. peel 'em, and slice 'em up fairly thin. freeze them. i have found that just doing them in one layer in a big ziploc works well, so that they don't stick together. they need to be frozen solid, but that shouldn't take more than a couple of hours.


toss your bananas in the food processor!


start processing on low. first they will become bally and sticky.



but then they will begin to smooth out. scrape the sides with a spatula as needed. 

this is where i like to add just a touch of almond milk - say 1/8 c or so. i prefer my ice cream "soft serve" style, and i find a bit of almond milk helps. if you prefer your ice cream on the harder side, just keep at it, and it will eventually whip up!


add anything additional (peanut butter, berries, etc), and whip on high for about a minute, or as long as it takes to make sure there are no clumps.


spoon into bowls, and enjoy!
