when my parents were here visiting at christmas, my dad made a soup similar to this, and i told him he should have done a guest-post on my blog!
well, i am currently on the other side of the country visiting my family, and in honour of that, here's a tasty potato leek soup recipe, inspired by his!
ingredients:
1 leek
1 large white or yellow onion
1 T butter
1 T garlic
4 c potatoes (i used russet) in 1" cubes
3 1/2 c water
1 1/2 c plain unsweetened almond milk
2 T granulated garlic
2 t salt
dash pepper
to make:
chop any rough edges off the top of your leek
slice it down the middle vertically, then finely into small strips
chop your onion into similarly sized bits
and toss butter, onion and leek into a frying pan on medium-low heat!
stir fry onions and leeks for about 15 minutes.
then add garlic, and fry about 5 minutes more!
while they are frying, throw your potatoes and water into a pot and boil for about 10 minutes. the water should just cover the potatoes, you may need to adjust the amount a little depending on the pot you use!
once they are boiled, remove from the heat, but leave everything in the pot.
add the leeks/onion mixture, as well as the almond milk, granulated garlic and salt to the pot.
blend with an immersion blender until it's smooth and creamy! (if you don't have an immersion blender, you can transfer the soup in batches to a normal blender, just be VERY CAREFUL because it is hot and may bubble or spit!)
