chocolate peanut ice cream

so, this ice cream maker situation is going very well! it's really easy to make such awesome cool treats. also, not that bad for you, when you're using almond milk!!

a note on xanthan gum. i tried making ice cream both with and without it, and i certainly recommend using it. it's a thickener, and i really find it makes a difference - the texture is much smoother and creamier with it. it can be found at most health food stores, and is key in gluten free baking as well!

this recipe makes about 4 half-cup servings.

ingredients:

2 c almond milk
1/4 c brown sugar (or more if you like sweeter!)
2 heaping T cocoa
dash salt
2 t vanilla
1 t xanthan gum

optional: nuts, peanut butter, etc... i used about 1/4 c peanuts

to make:

mix all ingredients EXCEPT any additional (nuts, etc) in a blender.
pour into ice cream maker. how long it takes will depend on your maker - mine takes about 20-30 minutes. mine has a high and low setting, and i use high for the first 10 minutes or so, then switch to low.
add nuts/garnishes at the end, or just sprinkle them on top! i added chopped peanuts...
