this recipe is based on my old faithful banana muffin recipe which is amazing. i was trying to think of creative ways to make it a little healthier, and i am also somewhat in the middle of a love affair with oatmeal (weird, right?)... so this is what was born.
they are tasty, just as tasty as the original version, but a fair bit healthier. i have removed the butter, replaced sugar with agave syrup, and added some oats in the place of flour. they still come out chewy and rich and just plain fabulous. give them a try!
i have not tried making them gluten free, as i don't have any gluten-free oats around, but generally throwing bananas at anything gluten free works well, so feel free to try!
1/2 c apple sauce
1/3 c agave syrup
1 egg (or egg replacer)*
2 med bananas
2 t vanilla
1 t baking soda
1/4 t salt
1 t nutmeg
1 c flour
1/2 c oats
*recipe is vegan if you use egg replacer!
to make:
mash bananas. i do this with a hand blender, but some arm-power and a fork will work as well!
add apple sauce, agave syrup, egg (or egg replacer), vanilla, baking soda, salt and nutmeg. mix everything up really well.
add oats and mix.
preheat the oven to 375. let the mix sit while the oven preheats.
grease a muffin tin (i use a quick spray of olive oil)
add flour and stir until it's just mixed
spoon into muffin cups
bake at 375 for 20 minutes
