peach raspberry muffins


can you tell i'm on the raspberry train this summer? i just can't get enough of them. 

i am also pretty excited about peaches. i love peaches so much, but they are only really good for a few months out of the year. i can't handle those winter, sad, hard, sour peaches. they just make me depressed. 

so, this summer, i have been keeping a steady supply of peaches in the house, enjoying them while i can, before another long, cold, peachless winter. i've been eating them in smoothies, tasty summer vodka drinks, on my morning granola, and just on their own. 

and now, muffins! this recipe makes 12!



ingredients:

1 1/2 c flour
1/2 c oatmeal
1/2 t salt
1 T baking powder
1 c milk
1 egg (or egg replacer)
1/3 c agave syrup
1 t vanilla
1/2 c fresh raspberries
1 ripe peach

to make:

mix flour, oatmeal, salt and baking powder in a large bowl.

 
in a separate bowl, mix milk, egg, agave syrup and vanilla. mix well.



then, add the wet bowl to the dry one, and stir until just mixed. then add raspberries (rinsed) and peach (rinsed and chopped).


 and mix to evenly distribute fruit. 


and spoon into muffin tins (either oiled, or with muffin cups)


bake at 375 for 25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.


allow to cool, and devour.
