mushroom onion gravy

oh gravy! many meals just aren't the same without a generous helping of gravy! if not gravy, who will smother your potatoes? who will drown your french fries? who will top your tofurkey? 


this recipe makes a ton, about 4-5 c. i don't know about you, but gravy goes fast in my house... but halve the recipe if need be!


ingredients:

4 c soup stock (or 4 c hot water with 2 bullion cubes dissolved in it)
3/16 c nutritional yeast
2 T garlic
1 T whole grain mustard
1/2 t black pepper
3 T corn starch*
1/8 c soy sauce

1 T oil
1/2 large onion, finely chopped (1 1/2 c)
10 small mushrooms, finely chopped (1 c)

*use more cornstarch if you like your gravy really thick. i was going for a fairly thin gravy here, but for things like poutine, i'd add another tablespoon or two of corn starch. keep in mind also, you can always add more corn starch after it thickens, if it's still too runny. to do this, mix 1 T corn starch and 2-3T water, and pour in to your gravy, while mixing. 

to make:

mix broth, nutritional yeast, garlic, mustard, pepper, corn starch and soy sauce. whisk to mix well.


fry onion and mushroom in oil on med-high heat,  about10 minutes, until they are soft.


add broth mixture to pan, and cook on med, stirring constantly 7-10 minutes, until gravy thickens.


serve with your favourite dish! mashed potatoes, french fries and cheese (POUTINE!!), tofu, tofurkey, etc etc!
