peanut butter chocolate chip ice cream
oh man.
i actually don't know how i lived without an ice cream maker. i feel like my quality of life has tripled since i got this magical machine.
matt was saying the other day that he needed a treat, and this is what we came up with. i have to say i am a huge fan of the peanut butter/chocolate combo. this is (in my opinion) the best ice cream recipe i have come up with so far.
ingredients:
2 c almond milk (vanilla unsweetened)
1 t xanthan gum
dash salt
1/4 c brown sugar
4 heaping T natural peanut butter *
1 t vanilla
1/4 c mini chocolate chips
* i'm sure you could use regular peanut butter as well, just remember that it's sweeter, so you may want to cut back on the sugar!
to make:
mix all ingredients except chocolate chips. blend in a blender, food processor or with a hand blender.
pour into your ice cream maker!
the time it takes will depend on your ice cream maker, i set mine on high for 10 minutes, then on low for 20.
you'll know it's done because it looks like ice cream ;)
add chocolate chips last, and allow it to mix just until they are evenly distributed!
enjoy! if you're not finishing it all right away, i would recommend freezing it into popsicle molds, as it will freeze pretty solid. i also sometimes freeze it into individual serving containers, and then let them thaw a bit before eating!!
