i love curry so much. mango curry is so unique, with it's blend of sweet and spicy flavours.

this recipe is surprisingly simple, and really quite easy to make. the key is finding good, ripe mangoes.

1 can coconut milk
2 med ataulfo mangoes
1 T or more red curry paste (to taste)
2 t olive oil
1 med onion, sliced
5 c chopped veggies/tofu/chicken
2 c chopped spinach (optional)
1/2 c water
to make:
chop mangoes. put mangoes, coconut milk and curry paste in a blender. blend until well mixed and smooth. taste it, it should be sweet but spicy. remember that it will taste a little hotter when it's cooked!

fry onions in oil for about 5 minutes, until they start to turn clear.


add veggies/tofu, and fry about 5 minutes until everything starts to soften up.


add sauce and water. simmer, covered about 5-10 minutes until veggies are cooked through.

then, remove the lid and simmer about 5 more minutes until the sauce has thickened up!


serve with rice, or naan bread!

*note* garlic salt goes very well with this. i often find curries
need a little more salt, and a shake of garlic salt really works with
this curry! i don't include it in the recipe because it's a personal
taste thing...
