so a while ago when we had our falafel feast, i made pitas for the
gluten eaters (ie everyone but suzanne) and they were fabulous. BUT poor
suzanne, she needed some pitas too.

so, i made her some gluten free pitas. they are a bit crisper than
wheat pitas, but you kind of have to take what you can get, my celiac
friends. ;)

ingredients:
2 c gluten free flour (i used 1/2 c each of sorghum flour, brown rice
flour, white rice flour and potato starch. you could also use a gluten
free pre-made "bread blend")
1 t xanthan gum
1 1/2 t baking powder
1 t salt
1 T olive oil
1 very large egg, or 1 egg and 1 egg white
warm water

to make:
mix flours, xanthan gum, baking powder and salt. make sure they are mixed well. i use a whisk.

beat oil and egg together, and add to flour mixture, stirring with a
large spoon, or with the paddle attachment on a stand mixer.


then add water. i used just a little more than 1/2 c. add it slowly,
mixing as you go. you want it to be a bit sticky but thick enough to
stay together.

break into 6 balls. using oiled/wet hands, flatten them to about 1/2"
thick. if they crack around the edges, use a little water to smooth
them out. they don't have to be perfect - you can see mine aren't.




bake at 400 degrees on the middle rack for 6 minutes, then carefully
flip and bake 6 minutes more. you will want to bake them a couple of
minutes longer if you are making larger pitas.


they won't look much different when they're done...

once they have cooled, open up the pockets with a sharp knife.
