my mom never liked to cook when i was little (she's learning now, my sister and i are teaching her!) but we always had amazing breakfasts. pancakes are a family favourite, with real, fabulous, canadian maple syrup. mmmmm. our other favourite topping is peanut butter. not instead of syrup, but as well as. oh man. i know very few people who have tried this combination, but i'd highly recommend it.
especially with these pancakes.
peanut butter and banana - how can you go wrong? it's a winning combination regardless of delivery.
this recipe makes a dozen pancakes.
ingredients:
2 bananas
pinch salt
1 egg, or equivalent of egg replacer
1/4 t cinnamon
1/2 t nutmeg
1 t vanilla
1 1/2 t baking powder
1 c flour
1 c (approximately) water or milk
to make:
peel one banana. throw that sucker in a bowl, and mash it up with a fork. add salt, egg/egg replacer, cinnamon, nutmeg, vanilla and baking powder, and whisk to mix throughly.
slice up your other banana, and have it on hand.
heat a skillet to medium, and add about a teaspoon of oil (i use coconut).
pour your pancakes. i use a 1/4 c measuring cup, but make them as big or small as you like!
add a couple of banana slices, then top with a touch more batter (this stops the banana from sticking to the pan!)
flip them when the pancakes get nice and bubbly.
cooking for a total of about 2-3 minutes per side.
serve with PEANUT BUTTER and syrup!!
