pizza pie
honestly, i'm torn on what to even call this. i guess "tasty" might be the best bet, but that doesn't give a very good description of what it actually IS. i was pretty set to go with "bread pie", but then pizza pie came to mind, and i think it has a better ring to it... even if it's not entirely pizza-like.
this is one of those things i just dreamed up as i was sitting at my desk, threw things into as i went along, and turned out perfectly. don't you love those meals? i wanted something super filling (it must have been a cool day) and cheesy and full of "meat". these types of cravings don't hit me all that often this time of year, so i went with it. i'm so glad i did. i'm not going to tell you this is the healthiest meal... it's about 50% bread, and no matter what the "food guide" tells you, that is NOT a balanced meal. however, it's not that BAD either, and considering that this is what passes for junk food in my house, i don't think we're doing too badly.
we ended up eating it dipped in marinara sauce, which was awesome. i know i could have just put the sauce IN in, but i feel somehow like dipping was better. like, would you rather have garlic breadsticks smeared in red sauce, or dipped in it? you know i'm right.
anyway, you could totally put red sauce in it. hell, do whatever you want. whatever makes you happy!!
this made about 2 dinners for each of us.
ingredients:
1 c whole wheat flour
1 c white flour
1/2 t salt
2 1/4 t (1 packet) yeast (quick rise)
1 1/3 c hot water
1/2 to 1 c white flour additionally
2 T vegan mayonnase
1 T onion powder
1 T garlic powder
2 T oil (i used coconut)
3 c broccoli, chopped very small
1 med white or yellow onion, diced
2 c white, brown or portabella mushrooms, diced
2 PC fake chicken breasts, or 1 package of veggie ground round, or meat substitute of your dreams, chopped
3 strips of fake bacon, diced
2 T garlic, grated or finely chopped
1 c grated daiya cheddar cheese
marinara sauce for dipping, if desired
to make bread:
mix 1 c whole wheat, 1 c white flours with salt, yeast and hot water. add additional flour a little at a time until it forms a soft, but not sticky dough. knead a few times, and throw in a greased bowl to rise 1 hour.
punch dough down, knead once or twice, and spread into a greased pie plate, pressing down so that it fits much like a pie shell.
allow to rise while you prepare the veggies.
to make filling:
heat oil in a large frying pan. add brocooli, onion, mushrooms, "chicken" and "bacon". stir fry on medium for 10 minutes, or until mostly cooked.
mix mayonnaise, garlic powder and onion powder in a large bowl. once the veggies are cooked, add them to the bowl along with the garlic and daiya. mix well.
to combine the two into a glorious marriage of foods:
pour the filling into the bread crust, distributing evenly. press down gently with the back of a spoon.
bake at 390 for 30 minutes.
slice, and enjoy with marinara sauce for dipping!
