vegan apple cinnamon bread
this recipe is a made-healthier, veganized version of this recipe. the original recipe is fabulous, but (as i tend to) i like to make things a little better for me, if possible. i also made it (gasp!) without pecans. looking back, i can't recall why. things are clearly always better with pecans, so you should probably add some when you make it.
ingredients:
1/2 c agave syrup
1/2 t salt
1 t cinnamon
1 t nutmeg
1/3 c apple sauce
1 T ener-g egg replacer powder
1/3 c milk (i used unsweetened almond)
1 T baking powder
1 1/2 c flour (i used 1 c white organic, 1/2 c whole wheat organic)
1 large apple
to make:
mix agave, salt, cinnamon, nutmeg, apple sauce, egg replacer, milk and baking powder. whisk to mix well. add flour and stir until just combined.
peel (if you like) and finely chop apple. mix into the batter.
grease a loaf pan, and spread the batter evenly in it (it will be a little thicker than the less healthy version, don't worry).
bake at 400 30-35 minutes, or until a toothpick inserted in the center comes out clean.
cool on a wire rack, or eat hot.
