herbed mushrooms
i used to not like mushrooms. i think it was a texture thing - as i kid i was a really picky eater, and i would not touch mushrooms. now i love them, and it was this recipe that changed my mind!
i have my lovely mother in law to thank for this one. she made these mushrooms for matt (who was also not a huge mushroom fan) and he liked them so much, he came home and made them for me! HE COOKED. that's when you KNOW he likes something!!
that was probably 7 years ago, and this has become a staple side-dish in our house since.
ingredients (makes 2-3 servings):
4 c white button mushrooms
1 t oil
1 small red pepper
1 small white or yellow onion
1/4 t salt
1/4 t pepper
2 t dried basil
2 t dried oregano
2 t garlic powder
to make:
clean the mushrooms, if they are small (1" cap) leave them whole, medium (1 1/2-2" cap) cut in half, or cut in quarters if they are large. slice the pepper and onion thinly.
heat a non-stick frying pan to medium.
once it's hot, add the oil, then the mushrooms, pepper and onion.
stir fry about 10 minutes, until the veggies soften, and the mushrooms start to release their liquid.
add the salt, pepper, basil, oregano and garlic powder. fry another 2 minutes.
enjoy!
