gourmet grilled cheese


oh grilled cheese... so reminiscent of childhood, so fabulously tasty, so bad for me. 

i have taken to making grilled cheese for dinner occasionally, but (of course) i am making every effort to make it a healthier option...

 
this isn't so much a recipe, as just ideas! 

the bread in these pictures is good old fashioned french bread, but i also like to use a nice grainy whole wheat bread. try one of my many fabulous bread recipes!


also adding a fabulous touch to a grown-up grilled cheese, condiments! i love to use dijon mustard, mayonnaise, hummus, antipasto, roasted red pepper dip... the options are endless!


just as important are toppings. i use goat cheddar, or vegan cheese like daiya (IT TOTALLY MELTS!!!) matt's favourite is smoked white cheddar, but again there are so many to choose from... swiss, brie, cheddar, feta, etc, etc. 


i also use tofurkey, spinach, tomato, tofu, thinly sliced artichoke hearts, pickles, roasted red peppers, sliced onions... really anything you like!

 
 another of my favourite things is to use garlic butter instead of normal butter for grilling. 




so, go make yourself a grilled cheese sandwich. you won't regret it!!
